Some folks on Phase One have difficulty eating vegetables which makes their choices somewhat limited within the already limited Phase One food choices. Here are some tips we’ve collected:
Try them! This may sound basic, but members have shared with us that during Phase One they taste foods differently and enjoy foods that they previously haven’t liked before. So when you are making “Caleb’s Crock of Cluck” on pg. 33 or “Rachel’s Rosemary Roast” on pg. 47, add tons of celery and onions and TASTE THEM. You might surprise yourself.
Find something you like and eat it! One of our members loves pickles and she has been eating them, alot of them.
Make a huge batch of “Juiced Up Spaghetti Sauce” pg. 39 along with “Great Balls of Beef” pg. 38! You can’t go wrong with spaghetti sauce and meatballs. Have a 3 spoons of sauce to every meatball. Watch our YouTube Video demonstrating making this delicious meal. It starts out with Adam’s Awesome Applesauce and then shows the sauce and meatballs.
Rediscover salsa! Even though there are peppers in salsa, we have found most brands to be compatible with Phase One. We know personally that Mild Salsa from Aldi works great. Two easy meals that I have used alot involves putting a package of chicken breast or beef roast in a crock pot with a jar of salsa and cook on low all day. The juices of the meat combine with the salsa and it is, mmm, mouth watering delicious. Empty the crockpot of the broth and measure out your 4 oz. of meat. My mouth is watering just typing this. Just a minute, I’ve got to get dinner going…
Give onions a try! You would be amazed how delicious onions are caramelized in water and seasoned. Wow. I cut up 5-8 onions at a time and caramelize them all, them I use them as a bed for my “Non-Crabby Patty” pg. 28 or “Chili Chow Down” pg. 22. They are delicious and filling.
Try each recipe in “Fresh, Full and Free” at least once! Again, you may be surprised and what you like.
Be creative! Some of our members make a vegetable soup up with cabbage, celery, onions, etc, and seasoning and then take an emersion blender to it and create a really thick stock to have available to fill them up as necessary.
